Risotto a la Dana - I made this tonight and it was loooooovely! (oh, and I made this for 6 people, hence the amounts of everything)
1 onion
mushrooms
2 crushed cloves of garlic
the zest of 1 lemon
a big chunk of chopped parsley
Fry all above in a big saucepan. Add half a bottle of dry, white wine, 1 litre of chicken stock and 4 cups of Arbori rice. Boil for 15-20 minutes.
Whilst the above is boiling I fried chicken pieces in olive oil, salt, pepper and lemon juice.
Mix the chicken with the risotto concoction, and then stir in loads of grated parmesan cheese.
Yummy, yummy - enjoy!
